When I’m preparing dinner for my family, I always make sure to include a vegetable of some kind. I almost always use frozen veggies. I love frozen vegetables because they are frozen at the height of their freshness, which means they retain the majority of their nutrients. I don’t have to worry about them ever going bad, and best of all my kids love them!

My favorite way to prepare vegetables is in the air fryer. I started with air fryer squash, baked potatoes, and carrots. Now I’ve started preparing frozen foods in the air fryer and it’s totally life-changing! Frozen Mixed Vegetables: Any type of frozen mixed vegetables will work for this recipe. I used a combination of carrots, broccoli, and cauliflower. You’ll want to use a 12-14 ounce bag for this recipe.

Olive Oil: Any type of oil will do, but I don’t recommend using a cooking spray. Over time cooking spray can damage the enamel on your air fryer. Instead, opt for your favorite cooking oil. You can also place your olive oil in a mister to reduce the amount of oil you use.

Salt and Pepper: All you need for seasoning is a little salt and pepper. Feel free to use some other seasonings as you like. For example, garlic powder, onion powder, or herbs like oregano.

Step by Step Instructions

Step 1: Preheat the air fryer at 400 F, for 5 minutes.

Step 2: While the air fryer is heating, toss the frozen vegetables in olive oil, salt, and pepper. Do not thaw the vegetables before.

Step 3: Place the vegetables in the air fryer basket. It’s okay if the vegetables overlap one another but don’t overcrowd. Cook at 400 F, for 10 minutes. Toss the vegetables and cook for an additional 3-5 minutes.

If you are thinking about how you can cook frozen mixed vegetables, then there are many options like roasting in the oven, grill, skillet, or in the air fryer. It is very easy and one of my favorite ways to cook mixed frozen vegetables in the air fryer as it takes less effort.

How to air fry frozen mixed vegetables?

There is no need to defrost the frozen vegetables before cooking them in the air fryer. Just take the required quantity of veggies into a mixing bowl, add some olive oil, salt, garlic powder, and ginger and give it a good toss.

Preheat the air fryer to 390 °F. I have made these roasted mixed veggies in the Instant Vortex Plus air fryer. Put the seasoned frozen veggies in the air fryer basket and cook for 8 minutes. Shake the air fryer basket after 4-5 minutes and then continue cooking it for the remaining time.

Once done, open the air fryer basket and check the vegetables for doneness by inserting a fork into the cooked veggies. Depending on the air fryer model, the timing may vary and you may need to cook for an additional few minutes.

The veggies will be tender and have a slight crunch, if you need them more crispy continue cooking them for a few more minutes.

How to make frozen vegetables crispy in air fryer?

If you want the crispy texture of the vegetables then ensure that you coat the vegetables well with oil. If they are not coated well then they will be soft. Also, depending on your air fryer, you might have to cook for an additional few minutes.

Serving suggestions

Roasted frozen veggies can be served as a side dish with your meals like mac and cheese, pizza, soups, and pasta dishes. They are great to make lettuce wraps or tortilla wraps.

Storage

It is best to serve the mixed veggies when they are hot. However, if you have any leftovers, you can store it in an air-tight container and when you are ready to serve, you can reheat them in the microwave or in the air fryer for 1-2 minutes at 350° F.
