Step 1Preheat oven to 350°. Prepare rice according to package directions. Step 2Meanwhile, sauté onion, bell pepper, and carrot in hot oil in a medium skillet over medium heat 10 minutes or until tender. Add garlic, cook 2 minutes. Step 3Combine hot cooked rice, onion mixture, chicken, beans, diced tomatoes and and chiles with juice and 1 1/2 cups cheese in a large bowl. Spoon into a lightly greased 3-qt baking dish; sprinkle with remaining 1/2 cup cheese. Step 4Bake, covered, at 350° for 30 minutes; uncover and bake 10 minutes or until cheese is melted. How to Make Black Beans and Yellow RiceIn a large sauce pan boil 2 1/2 cups water, then add olive oil or butter and package of rice. Stir for a minute and then cover tightly and turn down to simmer which is very low heat. These instructions may vary depending on the bag or box of rice that you use. Follow the directions on your package if they vary from those listed. Allow rice to simmer for 20 – 25 minutes until tender. Fluff rice with a fork. While the rice is cooking prep cilantro and beans. In a separate saucepan or skillet add black beans that have been drained and rinsed. Set to medium heat. Sprinkle cumin and chili powder over the top. Stir well. Then add cilantro and lime juice. Stir until warmed. Mix rice and black bean mixture together and season with salt and pepper to taste. Serve with sour cream or yogurt and more fresh cilantro.
