This Crockpot Bone In Chicken Thighs and Veggies Dinner has a really great herb flavor and is really tasty and juicy!

That’s one of my favorite things about slow cooker chicken thighs – it’s almost impossible to overcook a chicken (or really any type of meat or poultry) when you’re cooking it so slowly over low temperature! I make ribs in the slow cooker too!

The meat falls off the bone in this recipe, which is one of my favorite things. You could swap our the bone-in chicken thighs with boneless/skinless chicken thighs as well, to make it a little easier. I find that buying the bone-in is more economical for us.

How to Make this Slow Cooker Chicken Thighs with Potatoes and Carrots Recipe

Ingredients needed to make this Crockpot Bone In Chicken Thighs and Veggies Dinner

  • 4 chicken thighs
  • salt and pepper
  • 2 potatoes, sliced into cubes
  • 3/4 cup carrots, chopped into rounds
  • 1/4 cup chicken broth
  • 1/4 cup white wine
  • 1 teaspoon minced garlic
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Place chicken thighs into a slow cooker and season with salt and pepper.

Slow Cooker Chicken Thighs with Potatoes and Carrots Recipe

  • 4 chicken thighs
  • salt and pepper

  1. Place chicken thighs into a slow cooker and season with salt and pepper. Place potatoes and carrots on top of chicken and set aside.

  2. In a mixing bowl, add chicken broth, wine, garlic, thyme, salt and pepper and mix well. Pour over chicken thighs.

  3. Cook on low for 5-6 hours.

Can you put raw potatoes in a slow cooker?

All you have to do is prick the potatoes and rub in olive oil, season and then wrap in foil. Cook on high for four to five hours and you'll have perfect, creamy roast potatoes and no need for an oven.

How much longer do you cook bone

Boneless, skinless chicken thighs cook quickly, in 15 to 20 minutes, depending on the size. Bone-in thighs, however, take a bit more time, between 25 and 30 minutes. Use a thermometer to measure the internal temperature of the thighs. They're finished cooking when the temperature reads 165°F.

Is chicken breast or thigh better for slow cooker?

Chicken thighs, on the other hand, are more forgiving, making them especially well suited to the slow cooker because their dark meat becomes meltingly tender during the long cooking time; for this reason, we cook them longer than bone-in or boneless breasts, and we don't check their temperature.
