It all comes down to your taste, but here are your three best options:
I used the dark one for today’s recipe, but you can replace it with any of the other two. How Long Do Chocolate Covered Strawberries Last?If you have a party or a special occasion you are probably wondering how far in advance can you make chocolate covered strawberries and how to store them. My advice is, make them on the same day or the day before. Fresh ripe strawberries are very delicate fruits and they only last a few days at best. The California Strawberry Commission recommends buying only a day before you plan to dip them. After dipping, you should only store them for 1-2 days. They are best served on the same day you make them. As said above, strawberries are best fresh, and they only stay fresh for 1-2 days. I heard some people store them for up to 3-4 days (some even more), but I have never tried it and I wouldn’t recommend it. They decompose pretty fast and start looking mushy, so you risk ruining your dessert right before a special occasion. How to store Chocolate Covered Strawberries? You can either refrigerate, store at room temperature, or freeze them. Now let’s go through each of these methods: Refrigerate in an air-tight containerWhen refrigerating chocolate dipped strawberries, you need to keep in mind that they will condensate and look sweaty. That will seem unpleasant when you serve them, especially if you make them for a party. But I will share with you a few helpful tricks to avoid that. First of all, you need to refrigerate them until the chocolate is completely hardened (about 30 min). Then lay a paper towel on the bottom of the container, and place the strawberries on a plate, on top of the towel. If you make a large batch you can arrange them in layers, and place a sheet of parchment paper between each layer so they don’t stick together. Before serving, you need to take the container out of the fridge and bring it to room temperature. This way you will avoid the condensation and they will still look fresh. Store them at room temperatureKeep in mind that they will decompose faster at room temperature than refrigerated. That said, you can keep them on a plate, and cover them with something light, but not air-tight. If the strawberries are fresh, they should last for 1-2 days (never more than 2). FrozenIf you want to freeze the strawberries, you will need to cover them in choc completely. Otherwise, they will lose shape, crack and decompose. Put them in an air-tight container, separated from one another so they won’t stick, and freeze them. If you need to place them in layers, you can use parchment paper to separate them. You can keep them for up to three months and before serving, you will need to bring them to room temperature and serve on the same day. I have to say here, this is my least favorite method of storing chocolate covered strawberries, but it works if you really don’t have the time to make them on the same day. How to melt the chocolate in which you dip strawberriesThere are two ways of melting it:
How To Decorate Chocolate Covered StrawberriesA good idea would be to decorate them with white chocolate, and here is how:
Another idea is to sprinkle the chocolate dipped strawberries with chopped nuts before placing them in the refrigerator. You can also dip them in chocolate chips, or cookie crumbles. TIPS: After rinsing the strawberries, it is important to dry them really well. If there is any water left or any bruised areas, the chocolate won't stick. So pat them with a paper towel then let them dry completely. Another thing to keep in mind is that strawberries grow on the ground. Hence, you need to wash them well before dipping and eating. Leave the green caps on, and wash gently so you won't bruise them.
